Sure, it's tempting to dig right in. But slicing that bad boy could completely negate all the hard work you've put in. Meats continue to cook, even once they have been removed from heat. And if you slice before the meat is finished cooking, you'll not only end up with an underdone cut, you'll also lose all its juices. So hands off for at least another 10 minutes. Don't worry, you can kill that time with another bottle of beer.
