Which is why master mixologist Scott Beattie is your kind of guy. His idea of a holiday cocktail is the Coastal Collins, an aromatic, herbal take on the classic Tom Collins that even non-gin-drinkers can get excited about.

The secret: St. George “terrior” gin. This locally-distilled spirit’s taste and bouquet is modeled after that iconic Mt. Tam scent that wells up on warm evenings. It adds a festive, slightly piney, and distinctly Bay Area quality to this savory sipper.

1 1/2 oz St. George “terrior” gin
3/4 oz fresh lemon juice
1/2 oz 1/1 simple syrup
Splash of soda
Bay laurel and huckleberries to garnish
