Outside the Box takes the Paleo diet to the streets


Sensational food trucks abound in this town. But if you're looking to cut weight and build muscle, Cheese Wizards and Off The Rez won't fit the bill. 

A new entry into the mobile dining scene is flipping the script on food truck dining: Outside The Box is Seattle's first Paleo meal on wheels.

The Paleo diet (if you've been in an actual cave for the past few years) is all about eating like our wild ancestors did — lots of meats, vegetables, fruits, and nuts instead of refined flours and sugars.

Outside The Box's truck camps out in front of fitness-minded businesses (CrossFit gyms, farmer's markets) and serves up fresh, healthy, and tasty grub.

Their grass-fed beef slider is a hamburger you can feel good about eating — a third of a pound of beef on a bun made with protein-rich almond flour with uncured bacon and roasted garlic aoli.

The truck even offers stuff for sweet cravings, with the nutritionally-dense granola a favorite.

If you're too deep into your Insanity Workout to leave the house, they even deliver for a $15 surcharge.

If only the cavemen had been so lucky, they might still be here.
