Bacon Bandwagon

Miami's legal drug of choice? Bacon.


Bacon has come a long way from accompanying eggs and toast (case in point: it's also a cologne).

Continuing the evolution, local Miami chefs are giving us souped-up menus full of the crispy crack that is sizzling swine. Here are our three favorite dishes. 

db Bistro Moderne
Leave it to a three-time James Beard award-winning chef to recognize two kinds of pork belly are better than one. Daniel Boulud not only uses plenty of bacon in his classic French recipes, but finishes off his slow-baked Atlantic cod entrée and French-style peas with another star ingredient: crispy pancetta.

Biscayne Tavern
This hearty newbie is a must-visit for bacon lovers, as candied bacon is served upon request. And if that’s not enough, there's always the slow-poached duck egg with jowl bacon lardons salad. Or the ultra-rich calves liver with  yes  bacon

Prime 112
Besides the strips of Applewood-smoked Wisconsin Nueske served as snacks at the bar, this South Beach steakhouse staple adds plenty of smoked, crispy bacon to their baked clams foriana. If you play on the Heat (or ask nicely), they might even top your steak with it.
